Malbec

This Malbec is predominately from Cahors the original region of this French grape varietal. Vines at Labastide Haute average 35 years of age, and are trellised in simple "Guyot" fashion, which involves stringing the main stem of the vine horizontally along a fencepost string. 

The wine making process here includes regular "reassembly" and "pigeage" (for better extraction of aromas and fruit). Processing includes 15 to 18 days long vatting, pneumatic pressing, natural settling, and bonding. The vintage then spends between 8 and 10 months breeding in stainless steel tanks and barrels before it is considered ready for bottling.
