Campet Ste. Marie
Chardonnay
This Chardonnay has been selected by our winemaker from carefully selected vineyards in the south of the Pays d’Oc appellation, where the grapes are planted on steep hills, with limestone and clay soils, in cooler areas. Locally called “Campet” contributing to making a Burgundy style chardonnay it all starts with meticulously picking the grapes at optimal maturity, ensuring depth and character. The berries are then pneumatically pressed in order to extract only the very best juice. The alcoholic fermentation takes place at a low temperature around 15 °C, in stainless steel tanks.
Each year, a proportion of the vintage ages on wood for approximately five months, with regular batonage, to enhance the texture and the aromatic character of the wine, which is later assembled.
Color: Bright gold
Nose: Ripe peach aromas combined with honey, melon, and subtle toasted notes.
Taste: Elegant and smooth with a wonderful thickness and a persistent finish.
Pairing: Serve chilled with stuffed turkey, roasted chicken, chutney, mild blue cheese.
